Crispy Five-Spice Chicken with Pineapple Coconut Sauce
A crispy, golden chicken dish coated in aromatic five-spice and served with a glossy pineapple coconut sauce that balances savoury, sweet, and gentle heat.
Ingredients
- •500 g chicken thighs or chicken breast, diced
- •2 cloves garlic, finely minced
- •1 tsp Chinese five-spice powder
- •0.75 tsp fine salt
- •0.5 tsp MSG
- •1 tbsp soy sauce
- •1 large egg
- •80 g panko breadcrumbs
- •vegetable oil, for frying
- •200 ml coconut milk
- •120 ml pineapple juice
- •1.5 tbsp soy sauce
- •1 small red chilli, finely sliced
- •1 clove garlic, finely grated
- •1 tsp sugar (optional, adjust to taste)
- •2 spring onions, finely sliced
Instructions

In a large bowl, combine diced chicken with garlic, five-spice, salt, MSG, and soy sauce. Mix well until evenly coated.

Crack the egg into the bowl with the chicken and mix until all pieces are coated. Add panko breadcrumbs and toss until the chicken is fully covered. Press lightly to help the crumbs adhere.

Heat 2–3 cm of vegetable oil in a pan over medium-high heat. Fry the chicken in batches for 3–4 minutes, turning occasionally, until deep golden and crisp. Remove and drain on paper towel.

- •200 ml coconut milk

In a small saucepan over medium heat, add coconut milk, pineapple juice, soy sauce, chilli, garlic, and sugar (if using). Simmer gently, stirring occasionally, until slightly thickened and glossy.

Arrange crispy chicken on plates and drizzle with the pineapple coconut sauce, or lightly toss the chicken in the sauce if preferred. Finish with sliced spring onions and serve immediately.

Notes
Chicken thighs provide better juiciness and flavour, but breast works well if preferred. Keep sauce and chicken separate until serving to preserve crispiness. Works well with rice, couscous, or roasted vegetables. Sauce can be made ahead and reheated gently.
