One-Pot Chicken Tikka Masala
Britain's favourite curry made in one pot — tender marinated chicken pieces in a rich, creamy tomato and spice sauce. Served with fluffy basmati rice and warm naan bread.
Ingredients
- •600 g chicken thigh fillets (boneless, skinless, cut into chunks)
- •100 g natural yoghurt
- •2 tsp garam masala
- •1 tsp ground cumin
- •1 tsp turmeric
- •1 tsp chilli powder (adjust to taste)
- •1 tsp smoked paprika
- •2 tbsp vegetable oil
- •1 piece onion (finely diced)
- •4 pieces garlic cloves (crushed)
- •2 cm fresh ginger (finely grated)
- •400 g tinned chopped tomatoes
- •2 tbsp tomato purée
- •150 ml double cream
- •1 tsp caster sugar
- •15 g fresh coriander (chopped, to garnish)
- •300 g basmati rice (to serve)
- •4 pieces naan bread (to serve)
Instructions

- •1 tsp turmeric
- •600 g chicken thigh fillets
- •2 tsp garam masala
- •100 g natural yoghurt
- •1 tsp chilli powder
- •1 tsp ground cumin
Mix chicken with yoghurt, 1 tsp garam masala, cumin, turmeric, half the chilli, and a pinch of salt. Marinate for at least 20 minutes.

- •2 tbsp vegetable oil
Heat oil over medium-high heat. Cook the chicken in batches for 3-4 minutes until charred. Remove and set aside.

- •1 piece onion
- •4 pieces garlic cloves
- •2 cm fresh ginger
Add diced onion and cook 5-6 minutes until golden. Add garlic and ginger, cook 1 minute.

- •2 tbsp tomato purée
- •1 tsp smoked paprika
Add remaining garam masala, chilli, paprika, and tomato purée. Stir and cook 1 minute.

- •400 g tinned chopped tomatoes
- •1 tsp caster sugar
Pour in chopped tomatoes and sugar. Simmer 10 minutes until slightly thickened.

- •150 ml double cream
Return chicken to the pan. Stir in double cream and simmer gently 10-12 minutes until cooked through. Season to taste.

- •300 g basmati rice
- •4 pieces naan bread
Cook basmati rice according to packet instructions and warm the naan bread.

- •15 g fresh coriander
Scatter with fresh coriander and serve with rice and naan.
Notes
Marinating the chicken for even 30 minutes makes a big difference to flavour. If you have time, marinate for up to 4 hours in the fridge.
Tips
For a smokier flavour, char the marinated chicken under a hot grill for 5 minutes before adding to the sauce.
