Slow Cooker Chilli Con Carne
A deeply flavoured, warming chilli loaded with beef mince, beans, and smoky spices. The long, slow cook makes all the difference.
Ingredients
- •750 g beef mince
- •2 whole onion (diced)
- •4 whole garlic cloves (minced)
- •2 whole red pepper (diced)
- •800 g chopped tomatoes (2 tins)
- •400 g kidney beans (1 tin, drained and rinsed)
- •400 g black beans (1 tin, drained and rinsed)
- •3 tbsp tomato purée
- •1 whole beef stock cube
- •2 tsp ground cumin
- •2 tsp smoked paprika
- •1 tsp chilli powder (adjust to taste)
- •1 tsp dried oregano
- •20 g dark chocolate (70% cocoa)
- •salt and pepper (to taste)

Brown the beef mince in a large frying pan over high heat, breaking it up with a wooden spoon. Drain off excess fat.

Add the browned mince to the slow cooker along with the diced onions, garlic, and red peppers.

- •2 tsp ground cumin
- •400 g black beans
- •3 tbsp tomato purée
- •800 g chopped tomatoes
- •1 tsp chilli powder
- •2 tsp smoked paprika
- •1 tsp dried oregano
- •400 g kidney beans
Add the chopped tomatoes, kidney beans, black beans, tomato purée, crumbled stock cube, cumin, paprika, chilli powder, and oregano. Stir well.

Cover and cook on LOW for 8 hours or HIGH for 4–5 hours.

In the last 10 minutes, stir in the dark chocolate until melted and combined.

Season to taste with salt and pepper. Serve with rice, sour cream, and your favourite toppings.
Notes
Adding a square of dark chocolate at the end gives the chilli a rich, complex depth — trust the process!
Tips
Serve with rice, sour cream, grated cheese, and tortilla chips. Also makes a brilliant jacket potato filling.
